SLOW COOKER STUFFING

This week will be a shortened article and the last I will write for awhile because I’ll be thinking about what I would like to write with the holidays coming up, but I have to take a break. Most of you know I broke my hip and femur a year ago. The doctors told me I was just a slow healer, but for the last month I seemed to be going backwards and this last couple of weeks I knew something was wrong and really wrong when I was no longer able to walk. My hardware all came lose from my femur just because that bone wouldn’t heal. My only option is to have a bone graft and new hardware put in so you can see I will be healing and not writing.

I want to wish all my readers a very “Happy Thanksgiving” and the holiday season filled with love for those you love and for all who love you “Merry Christmas.”

Always around this time I get this request for stuffing:

SLOW COOKER STUFFING

1 cup butter

2 cups chopped celery

2 cups chopped onion

1 teaspoon poultry

seasoning

1 1/2 teaspoon sage

1/2 teaspoon pepper

1 1/2 teaspoon salt

1 teaspoon thyme

2 eggs, beaten

4 cups chicken broth

12 cups dry bread

crumbs

Mix butter, celery, onion, spices, eggs and broth together. Add bread crumbs, stir to blend. Cook in sprayed slow cooker on high for 45 minutes; reduce heat for 6 hours. Serves 10 to 12.

“I’ll be writing as soon as I’m up to it.”
