MOCK FILLET MIGNON

Where did the month of May go? It seems like a wink of eye my tulips, rhododendron and lilacs are gone. Every year, May is such a busy month. It moves along without giving me a chance to enjoy the springtime as I really would like. I have found out seasons come and go without waiting for me. I guess what I’m trying to say, the seasons won’t wait for me and I find myself falling behind. However, this year I have an excuse. For 6 months I have been limping around with a walker because of the accident I had in the fall. Now they tell me my hip and leg aren’t healing and be patient, continue with my treatment, take my medicine and have another x-ray in a couple of weeks.

Sometimes I wish time would stand still, but right now I wish I could jump a few months ahead. However, I have found out I’m going to have to slow down, which in the long run will be good for me. It seems too many of us are always rushing around and some of us are worse than others. Too many of us finish a schedule only to make a newer and busier one. There’s nothing wrong with thinking about yourself. To find time for yourself does not mean pick and choose and learn to say “NO!”

I know very few people who go outdoors to quietly sit for a few minutes. This is something I try to do everyday, that is if it’s not raining. Because I have put quite a burden on my husband, doing most of the cooking and cleaning; I have talked him into sitting outside and not doing a thing. I have found that is the best way to really relax. He doesn’t sit for too long, but even 5 minutes is a good thing.

This is the time of the year to cook and eat outside. This is a good outside dish.

MOCK FILLET MIGNON

1 1/2 lbs.. ground beef

1 (3 oz.) can of

mushrooms, drained

1 tsp. salt

1 tsp. minced onion

1 tsp. Worcestershire

sauce

1/4 cup milk

6 slices bacon

Mix beef, mushrooms, seasonings and milk. Shape into 6 portions.

Wrap edge of each portion with a slice of bacon. Grill 6-8 minutes preside over medium flame.
