EASY CHICKEN SALAD

Another Earth Day and Earth week, which is the 4th week in April and another chance to make a difference. There really are some easy and everyday things you can do that will make a difference. First get involved-if you see something in your community involving a environmental problem that you think there is a need to address it. Write a letter to your local newspaper; to your state legislator about state issues; to the senators, members of the house and even the President about national and world topics. Your letters are read, I wrote a senator about gun control about assault weapons and I did get an answer, so I knew someone read the letter. Don’t be afraid to toot your horn.

Most of us can take matters into our own hands. If you don’t recycle because it really isn’t much work to separate newspapers, plastic bottles and cans to a recycling center. We live in the country so we don’t have the privilege of having it picked up at the curb, but it still is easy to take it to Lincoln. The only thing there are so many people who don’t follow the rules that are posted, which really makes the husband just plain mad. Take a cloth bag to the grocery store to use instead of choosing paper or plastic. If a product is excessively packaged, boycott it. Choose an alternative that doesn’t use as much paper or plastic material for packaging. Join an environmental group. Turn the heat down, the lights off and ditto the water. Also fun things for families like build a bird house or plant a tree, In our family, our children each had a special tree. We have pictures of the kids by their little trees, through graduations, marriages and then with their families.

We should talk to children what endangered and extinct really mean. For a day take a child to the zoo and point out each animal that is in danger. Take a tour of the local woods, desert, or mountain areas where we live. Explain the importance of keeping open land and especially how the farmers treat their land by their farming methods, what is good or bad.

I recently was asked how I make my chicken salad, I was surprised because it is so easy.

EASY CHICKEN SALAD

1/2 cup diced cooked

chicken breast

1/4 cup diced celery

1 1/2 Tablespoon

mayonnaise

Combine chicken, celery and mayonnaise in small bowl; toss to blend.
