PEACH CRUNCH

I celebrated a birthday this week and it seems as if they roll around pretty fast. Every year I always think this is the year maybe I’ll just forget it, but anyone who knows me, knows I like to celebrate my birthday. I don’t really realize how old I really am, but my body has been telling me that I’m getting older. However as you get older a person is really hauling around a lot of memories. Some days it makes me feel like I’m carrying a sack of “Time” on my back. The good thing about this is I can reach into this sack and pull out a particular memory. I’m glad that all my past memories aren’t just of youth, because that could be pretty rough. I know I’d hate to have to walk again in my adolescent shoes, or again know the heartaches of those childhood growing pains.

Too many people you meet today don’t want to face the fact that everybody must grow old; they seem to think they can act 20 years younger. Nothing turns me off any more than a person who can’t grow up and accept being an adult. I’m also one that doesn’t think it’s necessary to put a certain number with your age. I just can’t think in terms of how many years I have lived. I’m perfectly satisfied with the age I am. I’m also happy where I am in life and looking forward to what is coming next. I do not actually feel a year older on my birthday. I only feel a sense of minutes, hours and days that are mine to enjoy. The greatest gift I can get for my birthday is to have a great day.

So I passed another birthday thinking it was one of the nicest days I ever had and went on with living. I didn’t even bake a cake this year, but made something that is a favorite of mine.

I had some peaches sitting out on the counter so I made a peach crunch.

PEACH CRUNCH

4 cups cut-up peaches

3/4 cup flour

3/4 teaspoon baking

powder

1 egg

1/2 cup chopped pecans

1 cup sugar

1/4 cup melted butter

Pinch of salt, cinnamon

and nutmeg for topping

Place peaches in buttered 9″ pie pan. Combine dry ingredients and mix in the egg. Sprinkle mixture over peaches. Sprinkle pecans and pour melted butter over all. Bake 50 to 60 minutes at 350 degrees until golden brown.
